Ingredients
- 6 bone-in, skin-on chicken thighs (about 2 1/2 pounds)
- 1 1/2 pounds baby potatoes, halved
- 1 large head broccoli, cut into florets
- 4 tablespoons olive oil, divided
- 4 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 1/2 teaspoons kosher salt
- 3/4 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes
- 2 tablespoons chopped parsley
Instructions
- Heat oven to 425 F. Line a rimmed sheet pan with parchment or foil.
- Toss potatoes with 2 tablespoons oil, half the garlic, 3/4 teaspoon salt, 1/4 teaspoon pepper, and oregano. Spread on the pan. Nestle chicken thighs skin-side up among the potatoes. Rub remaining 2 tablespoons oil, remaining garlic, lemon zest, remaining salt and pepper, paprika, and red pepper flakes over the chicken.
- Roast 22 minutes. Add broccoli around the chicken, tossing it in the pan juices. Roast 10 to 16 minutes more until chicken reaches 175 F and potatoes are tender.
- Squeeze lemon juice over the pan. Rest 5 minutes. Finish with parsley and serve from the sheet pan.
