Instructions

  1. Heat the oven to 350°F. Lightly grease an 8-inch square or 2-quart baking dish.
  2. Put the chopped Granny Smith apples and frozen berries in the dish. Add the sugar-free maple syrup and 1/2 teaspoon of the cinnamon. Toss.
  3. In a bowl, mix the oats, protein powder, remaining 1/4 teaspoon cinnamon, and a pinch of salt. Add the eggs and PB2. Stir until the oats are coated and the mix looks like a thick crumble.
  4. Spread the oat mix over the fruit and smooth the top.
  5. Bake 25 minutes, until the top is set and the fruit is bubbling at the edges.
  6. Serve warm with the vanilla yogurt, about 1/3 cup per serving.

Notes

US measures from the caption amounts: 500 g apples, 200 g frozen mixed berries, 35 ml sugar-free maple syrup, 2 g cinnamon, 250 g rolled oats, 60 g protein powder, 13 g PB2, 480 g vanilla yogurt. Oats use the USDA cup weight (81 g per cup). Protein powder volume varies by brand; 2 scoops at 30 g each is the reliable measure.
